Fire & Thistle is a small-batch culinary provisions brand made on Thistledown Farm in the Catskills of New York. We focus on fats, broths, rillettes, and pantry staples—products built from the working parts of the animal and designed for the savory kitchen.

We started Fire & Thistle to make better use of the animals we raise. Not just the familiar cuts, but the fat, bones, and secondary pieces that carry deep flavor and deserve careful handling. These are ingredients that have long anchored traditional kitchens, and we believe they still matter.

All of our products begin with animals raised on our own pasture using regenerative grazing practices. From there, we render, cook, and preserve in small batches, prioritizing clarity of flavor over novelty. The goal is not excess, but intention: single-origin fats, regenerative flavor, and provisions that fit naturally into everyday cooking.

Fire & Thistle is closely connected to Thistledown Farm, but distinct from it. Where the farm focuses on raising animals well, Fire & Thistle focuses on finishing that work—transforming whole animals into shelf-stable and refrigerated provisions with a long culinary life.

We make fewer products than we could. We take more time than we need to. And we aim for flavors that feel grounded, useful, and quietly distinctive.
